1. Bring a pot of water to a boil and cook ramen noodles for 2 minutes until just loosened; drain and toss with 1 tsp sesame oil.
2. Heat 1 tbsp canola oil in a large non-stick skillet or wok over medium-high heat.
3. Add sliced chicken, season with salt and pepper, and cook 3–4 minutes per side until golden and cooked through; remove and set aside.
4. Add remaining oil to the pan, then garlic and ginger; stir 30 seconds until fragrant.
5. Add broccoli, bell peppers, and carrots; stir-fry 2–3 minutes until vegetables are tender-crisp.
6. Whisk soy sauce, sesame oil, brown sugar, and rice vinegar in a small bowl.
7. Return chicken to the pan, pour in sauce, then add noodles; toss continuously for 1–2 minutes until coated and heated through.
8. Remove from heat and garnish with green onions and sesame seeds; serve immediately.
