2. Add ground turkey and cook until no longer pink, about 5 minutes, breaking up the meat as it cooks.
3. Stir in taco seasoning and corn kernels, cooking for 2 minutes to bloom the spices.
4. Add diced tomatoes with juices and cooked quinoa, reduce heat to medium-low, and simmer for 5–6 minutes until flavors meld.
5. Finish by stirring in lime juice and cilantro, then season with salt and pepper to taste.
6. Serve hot, garnished with shredded cheese, avocado, or additional cilantro if desired.
