Description

Ingredients

  • 1 cup cooked lentils
  • 1 medium sweet potato, peeled and diced
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • salt to taste
  • ground black pepper to taste

  • Instructions

    1. Preheat oven to 400°F and toss diced sweet potato with half the olive oil, salt, and pepper

    2. Roast sweet potato on a baking sheet for 20 minutes or until tender

    3. Meanwhile, warm cooked lentils in a saucepan over low heat

    4. In a small bowl, whisk remaining olive oil with lemon juice, salt, and pepper to make dressing

    5. Divide warm lentils between bowls, top with roasted sweet potato and fresh spinach

    6. Drizzle lemon dressing over each bowl and serve immediately
