Description

A make-ahead fall breakfast featuring hearty sourdough cubes soaked in a spiced custard with apples, baked until golden and served with maple syrup or whipped cream.

  • 1 loaf day-old sourdough bread, cubed (about 12 cups)
  • 6 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons vanilla extract
  • 2 medium apples, peeled and diced
  • 3 tablespoons melted butter (plus extra for greasing)
  • maple syrup for serving
  • whipped cream or caramelized apples for topping

  • Instructions

    1. Grease a 9×13-inch baking dish with butter.

    2. Arrange cubed sourdough in the prepared dish.

    3. In a large bowl whisk eggs, milk, cream, brown sugar, granulated sugar, cinnamon, nutmeg and vanilla until smooth.

    4. Scatter diced apples over the bread cubes.

    5. Pour the custard evenly over the bread and apples, pressing gently to ensure absorption.

    6. Cover with foil and refrigerate overnight.

    7. Preheat oven to 350°F (175°C) and let the dish sit at room temperature for 20 minutes.

    8. Drizzle melted butter over the top and bake uncovered for 45–50 minutes until edges are crisp and center is set.

    9. Let rest for 5 minutes before slicing.

    10. Serve warm with maple syrup and optional whipped cream or caramelized apples.
