Description

Ingredients

  • 2 thick slices sourdough bread
  • 3 tbsp hummus
  • 1 small handful baby spinach
  • 23 strips roasted red peppers
  • ½ cucumber thinly sliced
  • 2 tbsp feta cheese crumbled
  • small handful purple cabbage shredded
  • ¼ cup grated carrot
  • drizzle olive oil
  • pinch salt
  • pinch cracked black pepper

  • Instructions

    1. Lightly toast or use fresh sourdough slices.

    2. Spread hummus evenly on one slice of bread.

    3. Layer baby spinach, cucumber slices, and roasted red pepper strips.

    4. Sprinkle crumbled feta over the vegetables.

    5. Top with shredded cabbage and grated carrot.

    6. Drizzle with olive oil and season with salt and pepper.

    7. Spread a thin layer of hummus on the second bread slice and close the sandwich.

    8. Press gently and slice diagonally before serving or packing.
