1. Mix starter and water until combined
2. Add flour and mix to form a shaggy dough
3. Rest for 30 minutes
4. Add salt and knead until smooth
5. Bulk ferment for 8-12 hours at room temperature
6. Shape dough into a round and place in a floured banneton
7. Proof for 1-2 hours
8. Preheat Dutch oven to 230 degrees C
9. Transfer dough to Dutch oven, score the top
10. Bake covered for 20 minutes
11. Remove lid and bake for 25 minutes until golden
12. Cool completely before wrapping
