3. Shape mixture into six even oval patties and sear in the hot skillet for 2 to 3 minutes per side until browned; arrange in a greased baking dish.
4. In the same skillet melt butter, whisk in flour to form a roux, cook 2 minutes until lightly golden.
5. Slowly whisk in beef broth and milk until gravy is smooth and thickened; season with salt, pepper, and a dash of Worcestershire sauce.
6. Pour gravy over patties in the baking dish, cover with foil, and bake for 25 to 30 minutes, uncovering the last 5 minutes if desired.
7. Let rest 5 minutes before serving to allow gravy to set and juices to redistribute.
