A cozy autumn-inspired panini featuring crisp apples, sharp cheddar, and toasted sourdough, perfect for Thanksgiving lunch or using up holiday leftovers.


Ingredients

  • Sourdough bread, 4 slices
  • Sharp cheddar cheese, 4 oz (4–6 thin slices)
  • Honeycrisp or Granny Smith apple, 1 medium, thinly sliced
  • Unsalted butter, 2 tbsp, softened
  • Dijon mustard or cranberry sauce, 1–2 tsp per sandwich
  • Sliced roast turkey, 2–4 oz (optional)
  • Caramelized onions, 2 tbsp (optional)
  • Fresh thyme or sage, a pinch (optional)

  • Instructions

    1. Thinly slice the apple and turkey if using.

    2. Spread softened butter on one side of each bread slice.

    3. Spread Dijon mustard or cranberry sauce on the unbuttered sides.

    4. Place cheddar slices on the mustard side of two bread slices.

    5. Top with apple slices and turkey if desired, then add optional onions and herbs.

    6. Add a second slice of cheddar and top with remaining bread, buttered side out.

    7. Preheat panini press or skillet over medium heat.

    8. Grill sandwich in press for 3–5 minutes or cook in skillet with a heavy pan on top, flipping after 3–4 minutes, until golden and cheese is melted.
