1. Preheat oven to 375°F (190°C) and pat turkey breast dry
2. Rub turkey with olive oil minced garlic salt and pepper and tuck herbs under the skin
3. Simmer apple cider honey and dijon mustard in a saucepan until reduced by half into a glaze
4. Place turkey on rack in roasting pan and arrange vegetables around it
5. Roast turkey uncovered for about 20 minutes per pound until internal temperature reaches 165°F (74°C)
6. Baste turkey with apple cider glaze halfway through cooking and repeat as needed
7. Tent turkey with foil and let rest for 15–20 minutes after roasting
8. Deglaze roasting pan with remaining glaze and spoon sauce over sliced turkey to serve
