1. melt butter in a skillet over medium heat and cook diced apples with sugar and 1/2 teaspoon cinnamon until softened and slightly caramelized, about 4-5 minutes, then remove and cool
2. cut bread slices into sticks, about three to four sticks per slice
3. whisk eggs, milk, vanilla extract, remaining 1 teaspoon cinnamon, and salt in a bowl to create the custard mixture
4. if stuffing, place a spoonful of cooled apple mixture between two bread slices and press to seal before cutting into sticks
5. dip each bread stick into the custard briefly, coating all sides and allowing excess to drip off
6. heat a buttered skillet or griddle over medium heat (about 350°F)
7. cook soaked sticks in batches for 2-3 minutes per side until golden brown and crisp
8. sprinkle cooked sticks with cinnamon sugar while warm for extra crunch
