This Apple Cranberry Quinoa Salad is a vibrant and flavorful dish featuring crisp apples, tart cranberries, and crunchy pecans, all tossed in a bright honey-orange dressing. It’s quick to prepare, versatile, and perfect for a light lunch, side dish, or meal prep. Naturally gluten-free and easily made vegan.

Ingredients

Scale
  • 1 cup quinoa, uncooked
  • 2 cups water or vegetable broth
  • 1 large apple, such as Fuji or Honeycrisp, cored and diced
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1/4 cup fresh orange juice (from about 1 orange)
  • 2 tablespoons olive oil
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

  • Instructions

    1. 1. Cook the Quinoa: Begin by rinsing the quinoa thoroughly under cold water in a fine-mesh sieve. Combine the rinsed quinoa with 2 cups of water or vegetable broth in a medium saucepan. Bring it to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until all the liquid has been absorbed and the quinoa appears fluffy with visible “tails.” Once cooked, remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork. Transfer the cooked quinoa to a large bowl to cool slightly.

    2. 2. Prepare the Apples and Pecans: While the quinoa is cooking, core and dice your apple into small, bite-sized pieces. Roughly chop the pecans if they aren’t already.

    3. 3. Whisk the Honey-Orange Dressing: In a small bowl, combine the fresh orange juice, olive oil, honey (or maple syrup), Dijon mustard, salt, and black pepper. Whisk vigorously until the dressing is well combined and emulsified.

    4. 4. Combine Salad Ingredients: Add the diced apple, dried cranberries, and chopped pecans to the bowl with the cooled quinoa.

    5. 5. Dress the Salad: Pour the prepared honey-orange dressing over the quinoa and other ingredients.

    6. 6. Toss Gently to Combine: Using a large spoon or spatula, gently toss all the ingredients together until everything is evenly coated with the dressing. Ensure the apples, cranberries, and pecans are well distributed throughout the quinoa.

    7. 7. Garnish and Serve: If using, sprinkle the chopped fresh parsley over the salad for a pop of color and fresh flavor. Serve immediately or chill for later enjoyment.
