  • 2 cups apples, peeled and diced
  • 1 cup all-purpose flour (topping)
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 6 tablespoons cold butter
  • 1/2 cup powdered sugar
  • 12 tablespoons milk or cream
  • 1/2 teaspoon ground cinnamon (drizzle)
  • 1/2 teaspoon vanilla extract

  • Instructions

    1. Preheat oven to 350°F and grease or line a 9-inch springform pan.

    2. Whisk flour, baking powder, baking soda, and salt in a bowl; set aside.

    3. Cream butter and granulated sugar until pale and fluffy, about 2-3 minutes.

    4. Add eggs one at a time, then vanilla, mixing until combined.

    5. Alternate adding dry ingredients and sour cream, beginning and ending with dry, mixing on low until just combined.

    6. Gently fold in diced apples coated with a light dusting of flour.

    7. Pour batter into prepared pan and smooth the top.

    8. Combine topping flour, brown sugar, cinnamon, and cold butter, cutting until coarse crumbs form; sprinkle evenly over batter.

    9. Bake 45-50 minutes until topping is golden and a toothpick comes out with moist crumbs; tent with foil if browning too quickly.

    10. Cool cake in pan on rack for 15 minutes, then remove ring.

    11. Whisk powdered sugar, milk, cinnamon, and vanilla until smooth; drizzle over cooled cake.

    12. Slice and serve warm or at room temperature.
