1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
3. In a separate bowl, whisk sourdough discard, eggs, sugar, melted butter, and vanilla until smooth.
4. Gradually add dry ingredients to wet mixture and stir until a soft dough forms.
5. Fold in dried apples and chopped nuts.
6. Divide dough in half and shape each into a 10–12 inch log on the baking sheet.
7. Bake logs for 25–30 minutes until golden and firm.
8. Cool logs 10–15 minutes, then slice diagonally into 1/2 inch pieces.
9. Lay slices cut side down and bake 10–15 minutes per side until crisp.
10. Cool biscotti completely on a wire rack.
11. Whisk powdered sugar, spiced apple cider, and cinnamon to make glaze.
12. Drizzle glaze over cooled biscotti and let set before serving.
