2. Add sourdough starter and olive oil, mix gently, then add cold water until dough comes together.
3. Shape dough into a disk, wrap in plastic, and chill for 30 minutes.
4. Preheat oven to 375°F (190°C).
5. Roll out chilled dough to 1/4-inch thickness and fit into tart pan, prick base with a fork.
6. Line crust with parchment, add baking weights, and blind bake for 12 minutes.
7. Remove weights and bake 5 more minutes until lightly golden, then cool slightly.
