  • 1/2 cup feta cheese, crumbled
  • 1/2 cup walnuts or pecans, toasted
  • 1/4 cup dried cranberries (optional)
  • 1/4 cup red onion, thinly sliced (optional)
  • 3 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon fine sea salt, plus more to taste
  • 1/8 teaspoon freshly ground black pepper
  • 1 teaspoon lemon juice (optional, to keep apples from browning)

  • Instructions

    1. Rinse and dry the mixed greens thoroughly, then place them in a large salad bowl.

    2. Toast the walnuts or pecans in a dry skillet over medium heat for 2–3 minutes until fragrant; cool slightly.

    3. Whisk olive oil, apple cider vinegar, honey, Dijon, salt, and pepper in a small bowl or jar until emulsified.

    4. Thinly slice the Honeycrisp apples; if prepping ahead, toss with lemon juice to slow browning.

    5. Layer the salad: greens first, then apples, feta, toasted nuts, red onion, and dried cranberries.
