1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil
2. Place the block of feta in the center of the dish and surround it with cherry tomatoes
3. Drizzle the feta and tomatoes with olive oil and season with minced garlic salt and pepper
4. Bake for 25 to 30 minutes until the tomatoes burst and the feta softens and browns around the edges
5. Meanwhile boil the whole-grain pasta according to package directions then drain and reserve a little pasta water
6. Remove the baking dish from the oven and mash the feta and roasted tomatoes into a creamy sauce then add the baby spinach to wilt
7. Stir the pesto into the warm mixture and then combine with the cooked pasta adding reserved pasta water if needed to loosen the sauce
