Baked Salmon and Asparagus with Crispy Potatoes

Description

A simple one-pan meal combining tender baked salmon, crisp asparagus, and golden crispy potatoes seasoned with garlic, lemon, and herbs. Perfect for a quick spring or summer dinner.


Ingredients

  • 4 salmon fillets (6 oz each), skin-on
  • 1 lb asparagus, trimmed
  • 1.5 lbs new potatoes, halved
  • 3 tbsp olive oil, divided
  • 1 lemon, zested and juiced
  • 3 garlic cloves, minced
  • 2 tbsp butter, cut into pats
  • 2 tbsp fresh dill or parsley, chopped
  • salt and pepper to taste

  • Instructions

    1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

    2. Parboil potatoes in salted water for 8 minutes, drain, and let steam dry.

    3. Toss potatoes with 2 tbsp olive oil, minced garlic, salt, and pepper; spread in a single layer and roast for 20–25 minutes, flipping halfway.

    4. Push potatoes to one side of the sheet and place salmon fillets skin-side down and asparagus spears on the other side.

    5. Drizzle salmon and asparagus with remaining olive oil, then season with lemon zest, garlic, salt, and pepper.

    6. Dot salmon with butter pats and, if desired, sprinkle asparagus with Parmesan or brush salmon with honey-mustard glaze.

    7. Bake for 12–15 minutes until salmon flakes easily and asparagus is tender-crisp.

    8. Squeeze lemon juice over the tray contents, let salmon rest 2–3 minutes, then garnish with fresh herbs and serve.
