Description

Bright, tangy, and irresistibly soft, this sourdough loaf combines fresh lemon zest and poppy seeds for a tender, flavorful treat perfect for brunch or gifting.


Ingredients

  • 250 g all-purpose flour
  • 120 g active sourdough starter
  • 180 g granulated sugar
  • 115 g unsalted butter, melted
  • 2 large eggs
  • 120 g Greek yogurt
  • zest of 2 lemons
  • 2 tbsp fresh lemon juice
  • 1.5 tbsp poppy seeds
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 100 g powdered sugar (for glaze)
  • 1.5 tbsp lemon juice (for glaze)

  • Instructions

    1. Preheat oven to 350°F (175°C) and grease or line a loaf pan.

    2. In a bowl whisk melted butter, sugar, and eggs until pale and creamy, then stir in yogurt, vanilla, lemon juice, and zest.

    3. Fold in sourdough starter gently; if using discard, rest batter 30 minutes.

    4. In another bowl whisk flour, baking powder, salt, and poppy seeds.

    5. Fold dry ingredients into wet mixture in two additions until just combined.

    6. Pour batter into pan, smooth top, and bake 45–50 minutes until golden and a toothpick comes out clean.

    7. Cool in pan 10 minutes then transfer to rack. Whisk glaze ingredients and drizzle over cooled loaf.
