Description

These golden fritters combine fresh summer squash with simple pantry ingredients for a crispy, tender bite. They’re quick to prepare and perfect as a side dish or appetizer.


Ingredients

  • 2 cups grated summer squash
  • 1 teaspoon salt
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic minced
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 1/4 cup oil for frying

  • Instructions

    1. Place grated squash in a bowl and sprinkle with salt, then let sit 10 minutes.

    2. Squeeze drained squash in a towel to remove excess moisture.

    3. In a bowl whisk eggs, then stir in flour, parmesan, garlic, parsley and pepper.

    4. Add drained squash and mix until just combined.

    5. Heat oil in a skillet over medium heat until shimmering.

    6. Drop 2 tablespoon portions of batter into the skillet and flatten gently.

    7. Cook 2 to 3 minutes per side until golden brown and crisp.

    8. Transfer fritters to a wire rack or paper towels to drain.

    9. Serve hot with your choice of dip or sauce.
