Description

These stuffed zucchini boats combine the comfort of spaghetti with fresh garden zucchini for a healthy, family-friendly meal. Lean ground meat, marinara, spaghetti, and melted cheeses are baked inside hollowed zucchini halves for a satisfying dinner or lunch.

  • 4 medium zucchini (67 inches long)
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 23 garlic cloves, minced
  • 1 pound lean ground meat (beef, turkey, or chicken)
  • 1 cup cooked spaghetti, chopped
  • 1½ cups marinara sauce
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • Fresh parsley or basil for garnish

  • Instructions

    1. Preheat the oven to 400°F (200°C) and grease a baking dish.

    2. Wash zucchini and trim ends, then slice each lengthwise and scoop out the centers, reserving the pulp.

    3. Heat olive oil in a skillet over medium heat, sauté onion 2-3 minutes until softened.

    4. Add garlic and cook 30 seconds until fragrant.

    5. Add ground meat, season with salt, pepper, and Italian herbs, and cook until browned, about 5-6 minutes.

    6. Stir in reserved zucchini pulp and cook 1 minute, then add cooked spaghetti and marinara sauce, mixing to coat.

    7. Arrange zucchini halves in the baking dish and fill each with the meat and spaghetti mixture.

    8. Sprinkle mozzarella and parmesan evenly over the filled zucchini.

    9. Cover loosely with foil and bake 20 minutes, then remove foil and bake 5-10 minutes more until cheese is bubbly and golden.

    10. Let rest a few minutes, garnish with parsley or basil, and serve warm.
