1. heat olive oil in a non-stick skillet over medium heat
2. add garlic and sauté for 30 seconds
3. add diced chicken and cook until golden and cooked through, about 8 minutes
4. divide brown rice among four bowls
5. top rice with cooked chicken, carrots, cucumber, and edamame
6. drizzle peanut sauce and lime juice over each bowl
7. garnish with cilantro and serve immediately
