  • 1/4 cup whole wheat flour (optional)
  • 1/2 cup active sourdough starter
  • 3/4 cup warm water
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup diced pepperoni (optional)
  • 1 tsp Italian herbs
  • 1 egg
  • 1 tsp milk
  • 2 tbsp grated Parmesan cheese (optional)

  • Instructions

    1. In a large bowl mix sourdough starter with warm water and olive oil

    2. Add flour and salt and stir until a shaggy dough forms

    3. Knead by hand for 8–10 minutes until smooth and slightly tacky

    4. Cover and let the dough rise at room temperature for 3–4 hours until puffy

    5. Optionally refrigerate the dough for 1–2 hours for easier handling

    6. Roll dough into a 1/4-inch-thick rectangle on a floured surface

    7. Spread pizza sauce evenly leaving a border around edges

    8. Sprinkle mozzarella cheese, diced pepperoni, and Italian herbs over the sauce

    9. Roll the dough tightly into a log and slice into 1-inch sections

    10. Place buns cut-side up on a parchment-lined baking sheet and let rise for 30–45 minutes

    11. Preheat oven to 425°F (218°C)

    12. Brush buns with beaten egg and milk wash and sprinkle with Parmesan if using

    13. Bake for 15–18 minutes until golden brown and cheese is bubbly

    14. Cool buns on a wire rack for 5 minutes before serving
