1. Preheat the air fryer to 325°F or the oven to 350°F.
2. In a large bowl whisk together eggs, cottage cheese, milk, maple syrup, and vanilla until smooth.
3. Add pancake mix, oats, lemon zest, and salt, stirring until just combined, then fold in the blueberries.
4. Lightly grease silicone muffin molds or line a mini muffin tin with parchment liners.
5. Spoon batter into molds, filling each about three-quarters full.
6. For the air fryer, cook at 325°F for 8–10 minutes. For the oven, bake at 350°F for 12–15 minutes.
7. Check doneness with a toothpick; the tops should be set and lightly golden.
8. Allow the bites to cool in the molds for a few minutes before gently removing.
9. Serve warm with Greek yogurt, maple syrup, or a drizzle of lemon glaze.
10. Store cooled bites in an airtight container in the refrigerator up to 4 days or freeze up to 2 months.
