1. Combine steel cut oats, milk, and Greek yogurt or sourdough starter in a bowl and stir until no dry oats remain.
2. Add protein powder, vanilla extract, honey or maple syrup, and salt, mixing until smooth.
3. Divide half of the oat mixture into jars, add a layer of blueberries, then top with remaining oats.
4. Seal jars and refrigerate for at least 8 hours or up to 3 days.
5. Serve cold or warm for 30-60 seconds in the microwave, stirring before eating.
