A quick, budget-friendly skillet dinner with crispy potatoes, smoky sausage, tangy ranch seasoning, and melty cheddar—perfect for busy weeknights.
Ingredients
4 medium russet potatoes (about 1 1/2 lbs), diced 1/2-inch
1 lb smoked sausage, sliced into rounds
1 packet (1 oz) ranch seasoning
1 1/2 cups shredded cheddar cheese
2 tbsp olive oil or butter, divided
Salt and black pepper, to taste
2 tbsp sliced green onions (optional, for garnish)
Instructions
1. Prep potatoes by washing and dicing into 1/2-inch cubes; slice the smoked sausage into thin rounds.
2. Heat 1 tbsp oil or butter in a large nonstick or cast-iron skillet over medium heat until shimmering.
3. Add potatoes; season lightly with salt and pepper. Cook 12–15 minutes, stirring occasionally, until golden with tender centers.
4. Sprinkle ranch seasoning evenly over the potatoes and toss to coat well.
5. Push potatoes to the sides, add remaining 1 tbsp oil to the center, then add sliced sausage; cook 5–6 minutes until browned.
6. Stir potatoes and sausage together so everything is coated in ranch seasoning and heated through.
7. Reduce heat to low, sprinkle cheddar over the top, cover, and let cheese melt 2–3 minutes.
8. Garnish with green onions if using, adjust seasoning, and serve hot.
