1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
2. Combine graham cracker crumbs sugar and melted butter until texture resembles damp sand then press evenly into pan and bake for 8–10 minutes until lightly golden then cool slightly.
3. Beat cream cheese and sugar until smooth then mix in vanilla and eggs one at a time on low speed and spread over cooled crust.
4. Toss chopped apples with brown sugar cinnamon and flour then sprinkle evenly over cheesecake layer.
5. Bake at 350°F (175°C) for 30–35 minutes until center is set but slightly jiggly then cool at room temperature for 1 hour and refrigerate at least 3 hours.
6. Lift bars using parchment paper and drizzle with warm caramel sauce before slicing and serving.
