2. Cube sourdough and sweet rolls; if fresh, toast at 300°F for 10 minutes to dry.
3. Whisk eggs, milk, cream, brown sugar, vanilla, cinnamon, and nutmeg until smooth.
4. Pour custard over bread cubes, toss gently, and let rest 20–30 minutes.
5. In a skillet, melt 2 tablespoons butter, add apples, brown sugar, and cinnamon; cook until golden, then cool.
6. Layer half the soaked bread in the dish, top with half the apples, then repeat.
7. Cover with foil and bake 25 minutes, remove foil, bake 20–30 minutes more until golden and set.
8. Meanwhile, make caramel sauce: melt granulated sugar in a saucepan, stir in butter, whisk in cream and salt, then cool slightly.
9. Let pudding rest 15 minutes, slice, and drizzle with warm caramel sauce before serving.
10. Store leftovers refrigerated up to 3 days; reheat in oven at 325°F for 10–15 minutes, adding a drizzle of cream or caramel.
