Ingredients

  • fresh gulf oysters on the half shell (24)
  • unsalted butter (1 cup)
  • garlic finely minced (4-5 cloves)
  • fresh parsley chopped (2 tablespoons)
  • lemon juice (1 tablespoon)
  • parmesan cheese grated (1/2 cup)
  • creole seasoning (1 teaspoon)
  • black pepper (1/2 teaspoon)
  • olive oil (1 tablespoon)
  • french bread for serving

  • Instructions

    1. Preheat grill to medium-high (about 450°F).

    2. Melt butter in a cast iron pan and stir in garlic, Creole seasoning, and black pepper.

    3. Add lemon juice and parsley to the butter mixture and keep warm on the grill.

    4. Shuck oysters, discard top shell, and retain the oyster liquor in the shell.

    5. Arrange oysters cup side down on a grill tray or directly on the grates.

    6. Spoon the garlic-butter sauce over each oyster and sprinkle with Parmesan cheese.

    7. Close the grill lid and cook for 4–6 minutes until the cheese is golden and edges curl.

    8. Remove oysters with tongs, brush with extra butter sauce, and garnish with parsley.

    9. Serve immediately with lemon wedges and French bread.
