  • 1 bag (10–11 oz) Nacho Cheese Doritos, crushed
  • 1 lb ground beef
  • 1 block (8 oz) cream cheese, softened
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 12 cups shredded cheddar or Mexican-blend cheese
  • 1 packet taco seasoning
  • ½ onion, diced
  • 2 cloves garlic, minced
  • ½ cup sour cream

  • Instructions

    1. Preheat oven to 350°F (175°C) and grease a 9×13 inch casserole dish.

    2. In a large skillet over medium-high heat, brown ground beef until no longer pink. Drain excess grease.

    3. Add diced onion and minced garlic to the skillet and sauté until fragrant, about 1–2 minutes.

    4. Sprinkle taco seasoning over the meat and add ¼ cup water. Stir to coat and simmer for 1–2 minutes.

    5. Reduce heat and fold in softened cream cheese, Rotel tomatoes, and sour cream until the mixture is smooth and creamy.

    6. Layer half of the crushed Doritos in the bottom of the prepared dish.

    7. Spread half of the beef and cream cheese mixture over the chips, then sprinkle with 1 cup of shredded cheese.

    8. Repeat with the remaining Doritos, beef mixture, and top with the rest of the shredded cheese.

    9. Bake for 20–25 minutes until cheese is melted and bubbly. For extra crispiness, broil for 1–2 minutes, watching closely.

    10. Remove from oven and let rest 5–10 minutes before serving. Garnish with green onions, jalapeños, or sour cream if desired.
