A cozy, budget-friendly casserole of ranch-seasoned potatoes, smoky sausage, and melty cheese—easy to prep, family-approved, and perfect for busy weeknights or potlucks.
Ingredients
6 medium russet potatoes, cubed
14 oz smoked sausage, sliced into 1/4-inch coins
1 oz packet dry ranch seasoning mix
2 cups shredded sharp cheddar cheese, divided
1 cup shredded mozzarella cheese (optional)
1/2 cup sour cream
4 tbsp unsalted butter, melted
1/2 cup cooked bacon crumbles (optional)
3 green onions, thinly sliced
Salt and black pepper, to taste
Nonstick cooking spray or butter, for greasing
Instructions
1. Preheat oven to 375°F (190°C); grease a 9×13-inch baking dish.
2. Wash and cube potatoes into bite-sized pieces; pat dry for better browning.
3. In a large bowl, toss potatoes with melted butter, ranch mix, a pinch of salt and pepper, and 1 cup cheddar.
4. Layer half the potato mixture in the dish; scatter half the sausage over top. Repeat with remaining potatoes and sausage.
5. Dot sour cream evenly over the layers for creamy pockets.
6. Top with remaining 1 cup cheddar and mozzarella if using.
7. Cover loosely with foil (spray underside to prevent sticking) and bake 35 minutes.
8. Remove foil; bake 20 minutes more, until potatoes are fork-tender and cheese is bubbling and golden.
9. Optional: Broil 2–3 minutes for a deeper browned top; watch closely.
10. Garnish with bacon crumbles and green onions; rest 5 minutes, then serve hot.
