1. Preheat the oven to 375°F (190°C).
2. Using a serrated knife, slice off the top quarter of the sourdough loaf and scoop out the interior, leaving a one-inch-thick shell. Brush the inside with olive oil or melted butter.
3. In a bowl, stir together cream cheese, sour cream, and garlic until smooth. Fold in spinach, artichoke hearts, mozzarella, Parmesan, salt, and pepper.
4. Spoon the filling into the hollowed loaf and sprinkle with additional shredded cheese if desired.
5. Place the filled loaf on a baking sheet and bake for 25 to 30 minutes, until the cheese is bubbly and the crust is golden.
