1. Preheat oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
2. Grate zucchini, place in a towel, and squeeze out excess moisture.
3. In a bowl, whisk flour, baking powder, salt, pepper, and Italian herbs.
4. In another bowl, beat eggs, then whisk in oil, milk, and minced garlic.
5. Pour wet ingredients into dry ingredients and fold until just combined.
6. Fold in grated zucchini and 1 cup of shredded cheddar cheese.
7. Transfer batter to prepared pan, smooth the top, and sprinkle remaining ½ cup cheddar.
8. Bake for 45–55 minutes until a toothpick comes out clean.
9. Cool in pan 10 minutes, then transfer to wire rack to cool before slicing.
