Description
A quick, healthy stir-fry with tender beef, crisp broccoli, and a light savory sauce—all cooked in one pan for an easy weeknight meal.
Ingredients
1 lb flank or sirloin steak, thinly sliced against the grain
4 cups broccoli florets
3 garlic cloves, minced
1 tbsp fresh ginger, minced
2 tbsp low-sodium soy sauce (plus more for sauce)
1 tsp cornstarch (for marinade)
1 tbsp neutral oil (avocado or canola)
1/3 cup low-sodium beef or chicken broth
2 tbsp low-sodium soy sauce (for sauce)
1 tbsp oyster sauce or hoisin (optional)
1 tsp sesame oil
1 tbsp cornstarch (for sauce slurry)
1 tsp rice vinegar or lemon juice
1–2 tsp honey or brown sugar (optional)
Pinch red pepper flakes (optional)
2 green onions, sliced (garnish)
Sesame seeds, for garnish (optional)
Instructions
1. Marinate beef: toss sliced steak with 2 tbsp soy sauce, 1 tsp cornstarch, half the garlic and ginger; rest 10 minutes.
2. Make sauce: whisk broth, 2 tbsp soy sauce, oyster/hoisin (if using), sesame oil, vinegar, honey, red pepper flakes.
3. Stir in 1 tbsp cornstarch to the sauce to form a smooth slurry.
4. Heat a large skillet or wok over medium-high; add oil.
5. Sear beef in two batches 1–2 minutes until browned; transfer to a plate.
6. Add broccoli with a splash of water; stir-fry 2–3 minutes until bright and tender-crisp.
7. Return beef to pan; add remaining garlic and ginger; cook 30 seconds.
8. Pour in sauce; toss and cook 1–2 minutes until thickened and glossy. Garnish with green onions and sesame. Serve hot.
