2. Cut brioche or challah into 1 inch cubes and place in a large mixing bowl.
3. Whisk eggs, milk, heavy cream, brown sugar, granulated sugar, cinnamon, vanilla, melted butter, and salt until smooth.
4. Pour the custard mixture over the bread cubes and toss to coat evenly, then let sit for 10 minutes.
5. Transfer the soaked bread to the prepared baking dish and sprinkle with additional cinnamon and optional nuts or raisins.
6. Bake uncovered for 35 to 40 minutes until the top is golden brown and slightly crisp.
7. Let the casserole rest for 10 minutes, then drizzle with cream cheese icing.
