Instructions
1. Mix warm water, sourdough discard, yeast, and sugar in a bowl; let sit 5 minutes until foamy.
2. Add flour, salt, and softened butter; mix then knead 6–8 minutes until smooth and elastic.
3. Place dough in a greased bowl, cover, and let rise in a warm spot 1 hour until doubled.
4. Punch down dough, roll into 3/4-inch ropes, and cut into 1-inch pieces.
5. Bring boiling water and baking soda to a simmer; boil bites in batches 20 seconds, then transfer to a parchment-lined sheet.
6. Preheat oven to 400°F; brush bites with melted butter and bake 12–15 minutes until golden brown.
7. Stir cinnamon and sugar in a bowl; brush warm bites with butter and toss in cinnamon sugar until coated.
8. Serve warm and enjoy.
