1. Preheat oven to 400°F (200°C).
2. Place beets on a foil-lined baking sheet, drizzle with olive oil and sprinkle with salt. Wrap loosely in foil and roast for 40–50 minutes until tender.
3. Allow beets to cool slightly, then rub off skins and slice into wedges or rounds.
4. Trim and peel oranges, then segment by cutting between membranes over a bowl and reserving juice.
5. In a small bowl, whisk together olive oil, lemon juice, honey, reserved orange juice, salt, and pepper until emulsified.
6. Arrange greens (if using) on a platter, then layer roasted beets and orange segments.
7. Drizzle half of the dressing over the salad, crumble goat cheese on top, and pour remaining dressing.
8. Sprinkle with optional toppings such as toasted nuts and mint before serving.
