Instructions
1. Preheat oven to 350°F (175°C).
2. Grease a 9×13-inch casserole dish.
3. In a large skillet over medium heat, melt butter.
4. Add diced onion and cook until softened.
5. Add sliced squash and sauté for 8–10 minutes until tender.
6. In a bowl, combine cooked squash and onions with sour cream, cheddar, eggs, salt, pepper, and garlic powder.
7. Pour mixture into prepared casserole dish and spread evenly.
8. In a small bowl, mix breadcrumbs (or crushed crackers) with Parmesan cheese.
9. Sprinkle breadcrumb mixture evenly over the top of the squash mixture.
10. Bake for 25–30 minutes until casserole is bubbly and topping is golden.
11. Let stand 5–10 minutes before serving.
