Cottage Cheese Carrot Cake Dip

Description

A creamy, high-protein carrot cake–inspired dip made with cottage cheese, Greek yogurt, grated carrots, warm spices, and a touch of sweetener. Perfect as a healthy dessert or snack.


Ingredients

  • 1 cup cottage cheese (low-fat or full-fat)
  • 1/2 cup grated carrots
  • 1/4 cup Greek yogurt
  • 23 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg
  • 2 tablespoons crushed walnuts or pecans
  • 1 tablespoon shredded coconut (optional)
  • pinch of salt

  • Instructions

    1. Add cottage cheese and Greek yogurt to a blender or food processor and blend until smooth.

    2. Add grated carrots, maple syrup or honey, vanilla extract, cinnamon, nutmeg, and salt. Blend until uniform and creamy.

    3. Taste and adjust sweetness or spices as desired.

    4. Transfer dip to a bowl and stir in crushed walnuts or pecans and shredded coconut if using.

    5. Cover and refrigerate for at least 30 minutes to allow flavors to meld and texture to thicken.

    6. Serve chilled with apple slices, oat crackers, or other dippers of choice.
