1. Preheat oven to 375°F (190°C) and grease a casserole dish.
2. Wash and cube potatoes; soak in cold water briefly, then pat dry.
3. Heat oil or butter in a skillet over medium-high heat. Add sausage slices and cook until lightly browned.
4. In a large bowl, combine potatoes, onion, ranch seasoning, heavy cream or sour cream, half of the cheese, salt, and pepper.
5. Layer half of the potato mixture in the casserole dish. Top with browned sausage, then remaining potato mixture.
6. Sprinkle the remaining cheese evenly on top.
7. Cover with foil and bake for 30 minutes. Remove foil and bake 20–25 minutes more until cheese is bubbly and edges are golden.
8. Let rest 5–10 minutes before serving.
