Instructions
1. Preheat oven to 375°F (190°C).
2. In a large skillet over medium heat, melt butter.
3. Add onion and garlic and sauté for 2–3 minutes until translucent.
4. Sprinkle flour over vegetables and whisk for 1 minute to form a roux.
5. Slowly whisk in milk and chicken broth until smooth and thickened.
6. Stir in cream of chicken soup, salt, pepper, and thyme.
7. Fold in shredded chicken, mixed vegetables, and cheddar cheese if using.
8. Pour chicken mixture into a lightly greased baking dish and spread evenly.
9. Arrange biscuit dough pieces over the top of the filling.
10. Bake uncovered for 25–30 minutes until biscuits are golden and filling is bubbling.
11. If biscuits brown too quickly, cover loosely with foil for the last 10 minutes.
12. Let rest for 5–10 minutes before serving.
