1. Heat oil or butter in a Dutch oven over medium heat and sauté onion, carrots, and celery until softened, about 5 minutes.
2. Add garlic and cook for 1 minute until fragrant.
3. Season chicken with salt, pepper, and thyme; push vegetables aside and brown chicken for 3 minutes per side.
4. Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until chicken is cooked through.
5. Remove chicken, shred with two forks, and return to pot.
6. Stir in orzo and simmer 8-10 minutes until al dente, stirring occasionally.
7. Lower heat and fold in Boursin cheese and heavy cream until fully melted and the soup is creamy.
8. Adjust seasoning with salt, pepper, and lemon juice.
9. For Crockpot: combine chicken, broth, vegetables, garlic, thyme, salt, and pepper in Crockpot. Cook on low for 6-7 hours or high for 3-4 hours. Shred chicken, stir in orzo, cook on high for 20-25 minutes, then add Boursin and cream and stir until smooth.
