  • 56 medium carrots, chopped
  • 23 inches fresh ginger, peeled and sliced
  • 1 teaspoon ground turmeric
  • 23 garlic cloves, minced
  • 1 medium onion, diced
  • 4 cups vegetable broth
  • 1/2 cup coconut milk (optional)
  • 1 tablespoon olive oil
  • Pinch of black pepper
  • Sea salt to taste
  • Juice of 1/2 lemon
  • Fresh cilantro or parsley for garnish

  • Instructions

    1. Heat olive oil in a large pot over medium heat.

    2. Add diced onion and sauté until translucent, about 3–4 minutes.

    3. Stir in garlic and ginger and cook for 1 minute until fragrant.

    4. Add chopped carrots and turmeric, stirring to coat the vegetables.

    5. Pour in vegetable broth and bring to a gentle boil.

    6. Reduce heat and simmer until carrots are tender, about 20–25 minutes.

    7. Remove from heat and puree soup with an immersion blender or in batches in a blender until smooth.

    8. Return soup to low heat and stir in coconut milk if using.

    9. Season with sea salt, black pepper, and lemon juice to taste.

    10. Ladle into bowls and garnish with fresh herbs before serving.
