  • 4 cups thinly sliced yellow squash
  • 1 medium onion, diced
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons melted butter
  • 1 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley

  • Instructions

    1. Preheat oven to 350°F (175°C).

    2. In a skillet, melt butter over medium heat and sauté squash and onion until tender, about 8 minutes.

    3. In a bowl, combine sour cream, cheddar cheese, garlic powder, salt, and pepper.

    4. Stir the sautéed vegetables into the creamy mixture.

    5. Transfer mixture to a greased 9×13-inch casserole dish and spread evenly.

    6. Mix breadcrumbs with a little melted butter and sprinkle over the casserole.
