1. Cube day-old sourdough into 1-inch pieces and optionally toast at 350°F for 5–7 minutes
2. Sauté vegetables until tender and cook meat until browned, then drain
3. Whisk together eggs, milk, dried herbs, salt, and pepper until smooth
4. Grease a casserole dish and layer half the bread cubes, vegetables, meat, and cheese, then repeat with remaining bread and toppings
5. Pour the egg mixture evenly over the layers, press lightly to absorb, cover and refrigerate for at least 4 hours or overnight
6. Preheat oven to 350°F and bake uncovered for 45–55 minutes until the top is golden and the center is set
7. Allow the strata to rest for 10 minutes before slicing and serving
