Description
A warm, creamy chicken pot pie made effortlessly in the slow cooker. Tender chicken and vegetables in a rich sauce, topped with flaky crust or biscuits for a perfect winter comfort meal.

Instructions
1. Spray slow cooker with nonstick spray or use liner
2. Place chicken breasts in bottom of slow cooker
3. Add chopped onion, carrots, celery, garlic, thyme, salt, and pepper
4. In a bowl whisk broth, flour, melted butter, and cream
5. Pour sauce mixture over ingredients in slow cooker
6. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours
7. Remove chicken and shred with forks, return to pot
8. For thicker filling mix 1 tbsp cornstarch with 2 tbsp water and stir in, cook uncovered 20–30 minutes
9. Add frozen peas and stir
10. Optionally bake pie crust in oven or place biscuit dough on top of filling in slow cooker for final 30 minutes
11. Serve hot with crust or biscuits and garnish with parsley
