Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract
  • 3/4 cup dried cranberries
  • 3/4 cup toasted almonds, chopped
  • optional: 1 teaspoon grated orange zest
  • optional: white or dark chocolate for drizzling

  • Instructions

    1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

    2. Whisk together flour, baking powder, and salt in a medium bowl and set aside.

    3. Cream softened butter and sugar until light and fluffy using a mixer.

    4. Beat in eggs one at a time, then stir in vanilla and almond extracts.

    5. Gradually add dry ingredients to the wet mixture until a soft dough forms, then fold in cranberries and almonds.

    6. Divide dough and shape into two 10×2 inch logs on the prepared baking sheet.

    7. Bake for 25–30 minutes until firm and lightly golden, then cool on the sheet for 10–15 minutes.

    8. Reduce oven temperature to 325°F (160°C). Slice logs diagonally into 1/2-inch pieces using a serrated knife.

    9. Arrange slices cut side down on the sheet and bake 10–12 minutes, flip, then bake 8–10 more minutes until crisp.

    10. Cool biscotti completely on a wire rack; they will harden further as they cool.

    11. Optional: drizzle cooled biscotti with melted chocolate or sprinkle with extra nuts before chocolate sets.
