1. Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray or butter.
2. On a lightly floured surface, unfold the puff pastry and roll to smooth creases. Cut into 2×2 inch squares.
3. Press each pastry square into the muffin tin cavities to form small cups without stretching the dough.
4. Cut the brie into 3/4 inch cubes and place one cube into each pastry cup.
5. Top each brie cube with about 1/2 teaspoon of cranberry sauce.
6. Sprinkle chopped rosemary or nuts on top if desired for extra flavor and texture.
7. Whisk the egg and water to make an egg wash and lightly brush the pastry edges for a golden finish.
8. Bake for 13–15 minutes or until the pastry is puffed and golden and the brie is melted.
9. Allow the bites to cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm.
