  • 4 cups vegetable broth
  • 1 cup coconut milk or cashew cream
  • 1 teaspoon lemon zest
  • 23 tablespoons lemon juice (about 1 lemon)
  • 1 teaspoon mixed Italian herbs (oregano, thyme, basil)
  • Salt and pepper, to taste

  • Instructions

    1. Heat olive oil in a large pot over medium heat.

    2. Add chopped onion and cook until translucent, about 3–4 minutes.
