1. Preheat the oven to 400°F (200°C).
2. On a baking sheet, toss cubed butternut squash with 1 tbsp olive oil, salt, and pepper. Roast for 25–30 minutes until caramelized and tender.
3. In a large soup pot, heat the remaining olive oil over medium heat. Add chopped onion and carrot and sauté until soft, about 5 minutes.
4. Stir in minced garlic and cook for 30 seconds until fragrant.
