1. Pat chicken breasts dry and season both sides with salt, pepper, and half of the thyme.
2. Heat olive oil in a cast-iron skillet over medium-high heat until shimmering.
3. Sear chicken breasts 4–5 minutes per side until golden brown and cooked through; transfer to a plate and tent with foil.
4. Reduce heat to medium, add minced garlic to the skillet, and sauté until fragrant.
5. Stir in peas and cook 1–2 minutes until tender but still crisp.
6. Add diced peaches and chicken stock, scraping up browned bits from the pan.
7. Pour in heavy cream and lemon juice, stirring until the sauce is smooth and slightly thickened.
8. Return chicken and any juices to the skillet, spoon sauce over the top, and simmer 5 minutes until flavors meld.
9. Garnish with remaining thyme and serve directly from the skillet with chosen sides.
